​Enjoy three fun-filled days immersed in the fascinating world of cheese with our Artisanal class! You will learn the principles of great cheesemaking as we make at least seven different cheeses and focus on topics such as milk sources and how to assess milk quality, hygiene and sanitation, microbial cultures and rennet, proper equipment, the magic of cheese aging, cheese and wine pairing, salting and brining, cheese marketing, and much more. Included in all classes is lunch each day, an extensive cheese tasting, our complete artisan cheesemaking manual with recipes, and an extensive resource section which will guide you to all the necessary tools and information to make wonderful cheese! In order at ensure plenty of hands-on experience, each class is limited to 10 students. Price - $595

Eagle Mountain Farmhouse Cheese ia where Dave & Matt Eagle have created a unique, award-winning, family cheese operation that serves as a wonderful venue for this class. By focusing on the principles of artisanal cheesemaking, we will make Quark, Ricotta (whey & whole milk), Feta, soft-ripened cheese, Gouda, and a cheese of student's choice (often Mozzarella).  High quality local milk will allow the class to explore the secrets of making great cheese, as well as gain insights (and inspiration!) into the success of this new star of the cheese scene!

Come spend three days in our unique cheese facility in beautiful Vermont!  Learn the art of turning milk & salt into a stunning variety of cheeses.  Students will make seven different cheeses, learn the recipe differences if you are using cow, goat, sheep or water buffalo (lucky you!) milk, and the importance of raw milk.

Plus, you will have the opportunity to visit one of the top five farmer's markets in New England with over 65 vendors, and enjoy a wonderful Saturday evening dinner featuring delicious local & organic food & beverages.

At the end of the class you will be able make (and understand) any cheese recipe!

Artisanal Farmstead cheesemaking class in beautiful 
Amish Country in Ohio

Learn some new cheeses in the perfect commercial farmstead setting.  And this class will have the opportunity to work with sheep's milk!

We will be working in the heart of Ohio Amish country with our friends at Paint Valley Farms, a dairy renowned for impeccable milk quality and expert animal husbandry! Because of their commitment to quality, Paint Valley’s milk is ideal for creating delicious cheeses, as well as for learning how milk should transform into cheese.  

Using their beautiful A2A2 milk, we will teach the techniques for making some of the quintessential farmstead cheeses.

An extra special bonus of this class will be the wonderful meal cooked and served at our beautiful Amish host's home!
