Three Shepherds Farm is pleased to announce that since our 2011 classes was so
successful, we will once again team up
with Eagle Mountain Farmhouse Cheese for two more 3-day cheesemaking courses. The
artisanal beginning cheesemaking class will be held at Eagle Mountain's facility in Granbury, Texas on
March 30 - April 1, and an advanced class will follow on April 2-4.
In 2009, Dave Eagle (the proprietor of Eagle Mountain Cheese) came to
Vermont to participate in one of our three-day cheesemaking courses. He
returned to Granbury, Texas, established a state of the art cheese facility, and
now his wonderful cheeses can be found in upscale food markets throughout Texas.
And in August of 2011, Dave, Matt, and Corey took first place in their category at the
American Cheese Society! Dave has definitely been a model student!
Our classes in Texas class are ideal for anyone interested in
cheese--whether it be the appreciation of delicious artisan cheeses, making
handmade cheeses at home for family and friends, or having a business dedicated
to the making and/or selling or quality cheeses.
Each of our cheesemaking courses focuses on the principles of cheesemaking with a
hands-on approach. Over the three days, you will make at least 7 different
cheeses representing the various techniques used to create quality artisan
cheeses. By following these principles you will have the ability to make any
cheese with a little practice. We find that our course dramatically shortens
the learning curve and that our students are able to make quality cheeses very
quickly. Please let us
know if you would like to attend this fun-filled course--the class is limited to
10 students and it is on a first-come first-serve basis. The class is $550 per person
for the beginning class and $595 for the advanced class. Each class includes the Three Shepherds
Artisan Cheesemaking Manual, lunch each day (including an extensive cheese and
wine tasting), and all materials.
